Since March 16, when Dallas County dining rooms were ordered closed, the word “pivot” has been used to describe many of the restaurant industry’s efforts to save itself. The restaurants that have chosen to stay open on carry-out and delivery orders have been creative and resourceful, selling everything from grocery staples and toilet paper to “baller survival kits.” Bars have pivoted with cocktail kits and “booze bundles.” Even bakeries have pivoted with DIY cookie kits.
